Air Fryer Burgers: Juicy in About 20 Minutes
The air fryer is really just a small, fast convection oven, and it turns out a genuinely juicy burger on a busy weeknight with no spitting skillet to clean. The whole trick is browning the outside and hitting a safe temperature before that dry, moving air wicks the moisture out. It starts with the right beef: our single-source Diamond R 80/20 ground beef, ground from one animal at a time.
Why 80/20 is the right beef for the air fryer
Hot air moves around the patty from every side, so lean beef dries out in a hurry. The 20 percent fat is your built-in moisture. You do not need, and should not add, any water. Handle the meat as little as possible, cook by temperature instead of by the clock, and never press the patties down. That is how you get a juicy burger out of dry heat.
Ingredients
- 1.5 lb Diamond R 80/20 single-source ground beef
- 1.5 teaspoons kosher salt
- 3/4 teaspoon coarse black pepper
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- Pinch of paprika (optional)
- 1 tablespoon Worcestershire sauce (optional, for depth)
- 4 slices cheddar or American cheese
- 4 hamburger buns
- To serve: lettuce, tomato, sliced onion, pickles, and a house sauce of mayo, ketchup and a little relish
How to make it
- Preheat the air fryer to 370F for about 5 minutes so the patties get an immediate sear instead of a slow warm-up.
- Add the salt, pepper, garlic powder, onion powder, paprika, and Worcestershire to the beef and fold it together with a fork just until combined. Stop the second it is mixed. Overworking makes a dense, rubbery burger.
- Form 4 patties about 1/2 to 3/4 inch thick, and make them about 1/2 inch wider than the bun, since they shrink in the dry heat. Press a shallow thumb dimple in the center of each so they cook flat.
- Chill the shaped patties 5 to 10 minutes while the fryer heats, so the fat is firm going in.
- Lay the patties in a single layer with space between them. Do not crowd the basket, cook in two batches if you need to. Cook at 370F and flip once at the 6 minute mark. These run about 10 to 12 minutes total.
- Check the center with an instant-read thermometer. Pull them around 155F. Do not press them down while they cook.
- Lay a slice of cheese on each patty and cook 1 more minute until it melts.
- Rest the burgers 2 to 3 minutes. Carryover heat brings them up to the safe 160F while they rest, which keeps them juicy. Toast the buns in the basket about 1 minute, then build and serve.

Mix a simple house seasoning right into the beef, salt, pepper, garlic powder, and onion powder folded in gently. It out-flavors plain salt and pepper for free. Make the patties wider than the bun so they finish bun sized, and toast the buns in the basket for the last minute so the bottom does not go soggy. Want a lacy, crusty edge instead?
